Easy Lemon Pound Cake
A reduced fat, cake-and-pudding-mix-easy, lemon pound cake made without the 'pound' of butter.
1 (18.25-ounce) package lemon cake mix
1 (4-serving size) package instant lemon pudding mix
4 large eggs
1 cup water
1/3 cup vegetable oil
- Preheat oven to 350°F (175°C). Grease and flour a (10-inch) Bundt® pan; set aside.
- In a large mixing bowl, combine cake mix, pudding mix, eggs, water, and oil. With an electric mixer, beat at medium speed for 2 minutes. Pour into prepared pan.
- Bake for 50 to 60 minutes. Let cake cool in pan for 10 to 15 minutes on wire rack. Remove cake from pan and cool completely on wire rack.
- Sprinkle with powdered sugar or frost as desired.
Makes 12 servings.
