Citrus Jalapeño Chicken
Fresh lime juice, jalapeño peppers and orange marmalade give this chicken flavor and zest. For a final touch sprinkle with fresh cilantro. Enjoy with rice pilaf, cornbread and sautéed vegetables.
4 boneless, skinless chicken breast halves
1/4 cup POLANER Sweet Orange Marmalade
1 tablespoon Dijon mustard
1 tablespoon olive oil
1 tablespoon diced ORTEGA Diced Jalapeños
2 teaspoons lime juice
1/2 teaspoon grated lime peel
1/8 teaspoon ground cumin
- Preheat oven to 400°F (205°C). Line baking sheet with heavy-duty foil; place chicken on prepared baking sheet.
- Combine marmalade, mustard, oil, jalapeños, lime juice, lime peel and cumin in small bowl. Brush chicken generously with half of marmalade mixture.
- Bake for 15 minutes. Remove from oven; brush chicken generously with remaining marmalade mixture. Bake for an additional 15 to 20 minutes or until chicken is no longer pink in center. Season with salt and ground black pepper.
