No-Work Meatloaf

No recipe image available.Mashed beans economically provide extra protein and fiber in this satisfying and wholesome meatloaf. And remember, leftover meatloaf makes wonderful sandwiches cold or hot.

Recipe Ingredients:

2/3 cup cooked and mashed Navy, Great Northern, or Yellow-Eye Beans (or a 15.5-ounce can, drained, rinsed and mashed)
1 pound lean ground beef
1 cup tomato ketchup
1/2 cup saltine cracker crumbs or bread crumbs

Cooking Directions:

  1. Mix all the ingredients together well. Put the mixture in a bread pan, or shape into a loaf and place in a shallow baking dish.
  2. Bake in a preheated oven at 350°F (175°C) for 45 minutes.
  3. Serve with cooked rice.

Makes 6 servings
