Sausage and Green Chile Pilaf

No recipe image available.A family-pleasing Southwestern sausage and rice skillet supper. Add a green salad and a loaf of warm, crusty bread for a complete and satisfying meal.

Recipe Ingredients:

3 tablespoons butter or margarine
1 pound sliced mushrooms
1 cup diced onion
1 1/2 pounds bulk sausage, cooked and drained
4 (10.5-ounce) cans chicken broth
2 cups uncooked rice
1 (7-ounce) can ORTEGA Diced Green Chiles
2 teaspoons chili powder
1 teaspoon ground cumin

Cooking Directions:

  1. Preheat oven to 350°F (175°C). Lightly grease 13x9x2-inch baking dish.
  2. Melt butter in large skillet; cook mushroom and onion until tender. Add sausage, broth, rice, chiles, chili powder and cumin. Transfer to prepared baking dish; cover.
  3. Bake for 55 to 60 minutes or until rice is cooked and tender.

Makes 8 servings.
