Harvest Mallow Pizza
This treat's crispy rice marshmallow 'pizza crust' is loaded with chopped cream-filled sandwich cookies and chocolate chips, topped with vanilla frosting and decorated with autumn-colored sprinkles, candy corn and pumpkins.
6 cups cocoa or plain crispy rice cereal
12 to 16 peanut butter, vanilla or chocolate cream-filled cookies, finely chopped
1/3 cup butter
1 (10-ounce) package miniature marshmallows
1/3 cup miniature semisweet chocolate chips
1 cup ready-to-spread vanilla frosting
Candy corn and pumpkins
- In a large saucepan, melt butter over medium-low heat; add marshmallows and cook, stirring constantly, until marshmallows are completely melted. Remove from heat.
- Stir in cereal and chopped cookies; mix well. Press firmly onto a buttered 14-inch pizza pan; sprinkle with chocolate chips. Press chips gently into cereal mixture; cool completely.
- Spread frosting to within 1 inch of the edge.
- Decorate with sprinkles and candies.
Makes 16 servings.
