Lamb and Pasta Skillet Dinner
Quick and easy, Italian-style lamb and pasta skillet dinner.
1 pound lamb, sliced
1 tablespoon vegetable oil
1/2 cup chopped onion
1 clove garlic, crushed
3 cups tomato juice
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon crushed dried basil
1/2 teaspoon crushed dried oregano
8 ounces mostaccioli pasta
1 (10-ounce) package frozen mixed vegetables, thawed
- Heat oil in a large saucepan over medium heat until a drop of water sizzles in the oil. Add lamb and cook, stirring frequently until no longer pink. Add onion and garlic; sauté for 5 minutes, but do not brown.
- Add tomato juice, salt, pepper, basil and oregano; simmer covered for 10 minutes. Add mostaccioli and continue to cook for approximately 10 minutes or until pasta is almost cooked.
- Stir in mixed vegetables and simmer for 15 minutes, or until the vegetables are crisp-tender.
Makes 6 servings.
