Easy Cranberry Pie
This easy cranberry pie is baked in the microwave oven.
1 cup cranberries
1/2 cup raisins
2 tablespoons packed brown sugar
2 tablespoons brandy
2 tablespoons water
1 (21-ounce) can apple pie filling
1/2 teaspoon ground cinnamon
1 cup vanilla wafer crumbs
3 tablespoons butter or margarine, melted
1/4 cup chopped walnuts
1 (9-inch) ready-made shortbread pie crust
- Combine cranberries, raisins, brown sugar, brandy, and water. Cover and microwave on HIGH for 4 minutes. Stir, cover, and let stand for 5 minutes.
- Stir in apple pie filling and cinnamon; pour into shortbread pie crust.
- Combine vanilla wafer crumbs, melted butter, and chopped walnuts; sprinkle over the pie. Microwave on HIGH for 3 minutes.
Makes 8 servings.
