Strawberry Cream Pie
Glazed fresh strawberries atop a layer of cream cheese in a pastry crust.
1 (9-inch) baked pie crust*
1 (8-ounce) package cream cheese, softened
2 pints strawberries, rinsed, dried and halved - divided use
3 tablespoons cornstarch
1 cup granulated sugar
1 teaspoon lemon juice
Sweetened whipped cream for accompaniment
- Spread the baked pastry crust with the cream cheese.
- Slice 1 pint of strawberries and arrange on top of the cream cheese.
- Crush remain strawberries and combine with cornstarch, sugar and lemon juice in a saucepan. Cook over medium heat until mixture thickens. Cool and pour over the fresh berries. Chill until set.
- To Serve: Top individual servings with a dollop of whipped cream.
Makes 6 to 8 servings.
*Use store bought, ready-to-use pie pastry, or your favorite recipe for homemade pie pastry.
