Very Blueberry Pie
Blueberries are a superfood, and this super delicious, fresh blueberry pie is sure to become a spring and summertime family favorite.
1 (9-inch) baked pie crust*
1/4 cup butter
5 tablespoons all-purpose flour
3/4 cup water
1 cup granulated sugar
4 cups fresh or frozen blueberries
Lightly sweetened whipped cream or vanilla ice cream for accompaniment
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute, stirring constantly. Add the water and sugar and 1 cup of the blueberries. Bring mixture to a boil and cook over medium heat until mixture thickens, stirring frequently. Remove mixture from heat and cool.
- Stir in remaining 3 cups blueberries into cooled mixture and pour into baked pie crust. Refrigerate until ready to serve. Serve accompanied with a dollop of lightly sweetened whipped cream or a scoop of vanilla ice cream, if desired.
Makes 8 servings.
**Use store bought, ready-to-use pie pastry, or your favorite recipe for homemade pie pastry.
