Veggie Four-Cheese Italian Blend Pizza
A multi-veggie pizza with a specialty four-cheese Italian blend.
1 (12-inch) pre-baked pizza crust
1 tablespoon garlic in oil
2 Roma or Compari tomatoes, sliced 1/8-inch thick
1 1/2 cups shredded four-cheese Italian blend
1/4 cup julienned red onion
1/3 cup zucchini, roasted, sliced 1/8-inch thick
1/3 cup shiitake mushrooms, sliced 1/8-inch thick
1/3 cup artichoke hearts, quartered
1/2 teaspoon chopped fresh oregano
1/2 teaspoon chopped fresh thyme
- Preheat the oven to 450°F (230°C).
- Place the pizza crust on a pizza pan or a large baking sheet. Brush the crust with the garlic in oil; arrange the sliced tomatoes over the oil. Spread 1 cup of cheese over the pizza crust. Add the vegetables and herbs, and top with the remaining cheese.
- Bake for 10 to 12 minutes.
Makes 1 (12-inch) pizza.
