A simple way to turn a weekday meal into something special. Serve with wild rice pilaf and steamed fresh asparagus.
1 whole pork tenderloin, about one pound
4 tablespoon honey
2 tablespoon cider vinegar
2 tablespoons brown sugar, packed
1 tablespoon Dijon mustard
- Combine all ingredients but tenderloin; coat tenderloin well with sauce.
- Roast in 375°F (190°C) oven for 20 to 30 minutes, basting occasionally, unti meat thermometer registers 155°F to 160°F (approximately 65°C to 70°C).
- Slice thinly to serve.
