Irish Ham and Potato Pie

No recipe image available.This hearty Irish dish of ham, eggs and potatoes can be served anytime of the day, from breakfast to supper.

Recipe Ingredients:

6 large eggs
1/2 cup green onions chopped
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3 cups cooked diced potatoes
1 1/2 cups (6 ounces) shredded cheddar cheese
1 cup diced cooked ham
1/2 cup finely chopped green bell pepper
1/2 cup half-and-half (light cream)

Cooking Directions:

  1. Preheat oven to 350°F (175°C). Generously butter a 9-inch pie dish.
  2. Whisk together the eggs, onions, salt and pepper in large bowl.
  3. Add potatoes, cheese, ham, bell pepper and half and half.
    Stir to blend. Pour into prepared dish.
  4. Bake for 1 hour 20 minutes or until tested done when a knife inserted in the center comes out clean. Cut into wedges to serve.

Makes 4 to 6 servings.
