Fresh Mozzarella Watermelon Salad

Recipe Ingredients:

2 cups small seedless watermelon balls
2 cups mozzarella cheese
1 cup fresh chopped basil leaves (purple or green)
1 bunch green onions, trimmed and chopped
1/3 cup extra virgin olive oil
Salt and ground black pepper to taste
Balsamic vinegar as desired

Cooking Directions:

  1. Toss together the watermelon, mozzarella, basil, green onions and oil. season with salt and pepper to taste.
  2. Serve over a bed of baby greens with crostini on the side. Drizzle a bit of balsamic vinegar over if desired.

Makes 6 servings.
