A flavorful Mediterranean-style cheese tortellini salad with sweet peppers, red onion, kalamata olives, lemon, pine nuts and crumbled feta cheese.
1 (16-ounce) bag frozen cheese tortellini, cooked according to package
1/4 cup olive oil
2 teaspoons minced lemon zest
1/4 cup lemon juice
2 tablespoons pine nuts
1 tablespoon honey
1 green bell pepper, seeded and sliced into strips
1 red bell pepper, seeded and sliced into strips
1 small red onion, sliced into thin strips
1/2 cup sliced kalmata olives
1/2 cup crumbled feta cheese
Salt and freshly ground black pepper to taste
- In a small bowl, whisk together olive oil, lemon zest, lemon juice, pine nuts, and honey.
- Combine cooked pasta, peppers, red onion, and olives in a large bowl. Toss with dressing and feta cheese.
