California Avocado Tomatillo Salsa

1 ripe fresh California Avocado, seeded, peeled
4 tomatillos, husked, washed and very finely chopped
2 green onions, white and some green parts, thinly sliced
1/2 bunch cilantro
1 tablespoon minced jalapeño pepper, seeds optional
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup fresh squeezed lime juice
2 tablespoons extra virgin olive oil
- Combine all ingredients in a bowl.
- Cover and chill at least 30 minutes.
Makes 4 servings.
