Fresh Mint Condiment
A simply superb accompaniment with lamb.
1/3 cup olive oil
1/4 cup mint sauce
2 teaspoons Dijon mustard
1/2 teaspoon salt
1 pinch freshly ground black pepper to taste
1/2 teaspoon granulated sugar
2 large plum tomatoes, seeded and chopped
2 tablespoons fresh mint, finely chopped
- Whisk together oil, mint sauce, mustard, salt, pepper and sugar in small bowl until smooth. Stir in tomatoes and mint. Cover; refrigerate until ready to serve.
Makes about 1 1/2 cups.
