Jalapeño Glazed Turkey
Turkey tenderloin steaks are precooked in a microwave oven and finished off on the grill, brushed with an easy glaze made with chopped jalapeño chiles, apricot jelly, butter and lime juice.
2 pounds turkey tenderloin, cut into steaks
1/3 cup apricot jelly
3 jalapeño chiles, seeded and chopped
2 tablespoons butter or margarine
1 tablespoon lime juice
- In a microwave-safe dish, arrange cut-up turkey; cover with wax paper. Microwave on HIGH for 10 minutes, turning the turkey over halfway through cooking.
- In a microwave-safe cup, combine apricot jelly, finely chopped jalapeños, and butter Microwave on HIGH for 45 seconds; stir in lime juice.
- Grill the turkey, brushing with the jelly mixture, for 10 minutes or until meat thermometer inserted in thickest portion register 180°F to 185°F (approximately 85°C).
- Serve the turkey with the remaining jelly mixture.
