Orange Glazed Turkey Cutlets

Recipe Ingredients:

1 pound turkey breast cutlets
Salt and pepper to taste
Ground cinnamon
2 teaspoons vegetable oil
1/3 cup orange marmalade
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon powdered ginger

Cooking Directions:

  1. Lightly sprinkle one side of cutlets with salt, pepper and cinnamon.
  2. In large non-stick skillet, over medium-high heat, sauté turkey cutlets in oil 1 to 2 minutes per side or until turkey is no longer pink in center. Remove turkey to platter and keep warm.
  3. In small saucepan, over medium heat, combine marmalade, cinnamon, nutmeg, and ginger; cook 1 to 2 minutes or until mixture is heated throughout.
  4. To serve, spoon marmalade sauce over cutlets.

Makes 4 servings.
