Tasty crispy turkey cakes made with cooked turkey, bread crumbs, sautéed onion and fresh parsley. A great recipe for using leftover turkey.
3 cups finely chopped cooked Honeysuckle White Turkey
1 1/2 cups seasoned dry bread crumbs
2 to 3 large eggs, lightly beaten
2 cups onion, chopped and sautéed
1 tablespoon fresh chopped parsley
Salt and ground black pepper, to taste
- In a large bowl combine the turkey, bread crumbs, 2 eggs and sautéed onion and mix well; if mixture is too dry to form patties, mix in another lightly beaten egg. Add parsley, salt and pepper to taste, mix well and form into small patties.
- Heat oil in a large skillet over medium heat and fry croquette patties in oil until golden brown.
