A fast and tasty, south-of-the-border dish using cooked or leftover turkey.
1 pound sliced cooked turkey
1 cup tomato-based salsa
1 cup shredded cheddar cheese
1/4 cup sliced black olives
Flour tortillas, warmed for accompaniment
Sour cream for accompaniment
- Slice cooked turkey into 1/4-inch-thick slices. Place in a skillet, overlapping, and cover with salsa.
- Bring to a boil, reduce the heat, cover, and simmer for 5 minutes.
- Add grated cheddar cheese and sliced black olives. Cover and continue cooking for 1 minute to melt the cheese.
- Serve with warm flour tortillas and sour cream.
