My quick breads are done on the bottom and gooey on the top.

Q: My oven is running a bit hot and my quick breads are coming out over done on the bottom and gooey on the top. Is it better for me to raise the racks (tops of loaf pans already in the middle of the oven) or reduce the temperature and go a bit longer?

A: First, it sounds like you are baking your quick bread on a rack positioned too low in the oven. Bread should be baked on a rack positioned in the middle of the oven.

Secondly, I would suggest getting an oven thermometer to test the temperature accuracy of your oven. Knowing exactly what the temperature is, rather than relying on what the numbers say on the oven dial is a must when baking foods successfully.
