How can I keep my pumpkin
pie from cracking?
Q: Every time I bake pumpkin pies, they crack in the
center. How do you keep them from cracking? Am I leaving them
in the oven too long?
A: You're not the only one who has experienced baking
a pumpkin pie that ended up with a crack in the middle, it has
happened to the best of us!
According to Libby's Pure Pumpkin, the reason pumpkin pie cracks
on top (or why the filling pulls away from the crust) is the
oven rack may be too close to the top heating element in the
oven. This can cause filling to 'skin' and crack as it bakes
and to settle slightly when cooling and pull away from the crust.
Another possible reason is over-baking. Try reducing cooking
time by 5 to 10 minutes. Also, for best results, bake the pie
on the middle oven rack position or in the lower third of the
oven.
