Why are purchased bran muffins
darker?
Q: Purchased Bran muffins are dark in color. Recipes
for bran muffins do not have ingredients that make the muffin
dark. What ingredient needs to be added? I prefer the dark color
and taste of purchased muffins but would to bake my own. Any
suggestions?
A: Purchased bran muffins that are darker in color
may be because they contain dark molasses or dark brown sugar,
or even a combination of both. Plus, the flour used is probably
whole wheat flour instead of white, all-purpose flour. All of
these ingredients would contribute to a darker muffin.
