What is prosciutto?
Q: I was given a recipe that calls for basil, chicken
and prosciutto and I don't know what prosciutto is. Can you help
me? This is the first time I have visited your site and I love
it. - Doug C.
A: Prosciutto is the Italian word for "ham,"
it is essentially ham that has been seasoned, salt-cured (but
not smoked) and air-dried. The meat is pressed, which produces
a firm, dense texture. Regular ham, although it usually is "smoked",
can be used as a substitute in recipes if prosciutto is not available.
