First, be sure to roll out the pie dough large enough to fit the pie plate, because stretching and pulling the dough to fit the plate will cause the dough to shrink as it bakes. Also, once the dough has been placed in the plate, it helps to place the unbaked pie crust in the refrigerator for several minutes so the gluten in the dough can "settle down and relax" before baking.
