Alaska Scallops Wrapped in Prosciutto
Grilled scallops wrapped in prosciutto are ideal served as an appetizer or entrée.
Recipe Ingredients:20 proscuitto slices
1/2 cup prepared basil pesto
20 Alaska scallops, thawed if necessary
- Preheat grill to medium-high heat. Brush clean barbecue grill with oil.
- Place scallops on grill and cook for 4 minutes. Remove to a baking sheet; cool slightly.
- Lay proscuitto slices out on a flat surface and fold length-wise into 1-inch wide strips. One inch from the bottom of each piece, place 1 teaspoon pesto. Place a scallop over the pesto, and roll it up in the proscuitto.
- Grill an additional 1 to 2 minutes.
Makes 4 servings.
