Asparagus Guacamole

Asparagus GuacamoleServe with tortilla chips and vegetable sticks, or as a delicious accompaniment for grilled chicken or seafood.

Recipe Ingredients:

4 cups (1 pound) cut, trimmed, fresh asparagus*
1 small garlic clove, minced
2 teaspoons lime juice
1/4 cup canned diced mild green chiles
1/2 teaspoon salt
1/2 teaspoon ground cumin
2 tablespoons finely chopped onion
1/2 cup chopped, seeded tomato

Cooking Directions:

  1. Cook asparagus in small amount of water until tender. Drain well and cool.
  2. In a food processor, process asparagus and next five ingredients until mixture is smooth, about 30 seconds. Scrape bowl
  3. frequently.
  4. Remove from food processor and stir in onion and tomato.
  5. Chill thoroughly before serving.

Makes 4 servings.

*Or 2 (10-ounce) packages frozen cut asparagus.
