Baked, not fried, you won't miss those extra fat calories with these tasty zucchini sticks

Baked Zucchini Sticks

3 medium zucchini
2 large eggs
1 cup freshly grated Parmesan cheese
1 cup Italian seasoned bread crumbs

  1. Preheat the oven to 350°F (175°C). Grease a baking sheet and set aside.
  2. Cut each washed and unpeeled zucchini in half, then each lengthwise into 6 spears.
  3. In a large, shallow bowl, whisk the eggs.
  4. In a separate bowl, combine the Parmesan cheese and bread crumbs.
  5. Dip the spears into the beaten egg, then coat completely in the bread crumb mixture.
  6. Place the spears on prepared baking sheet and bake for 20 to 25 minutes or until golden brown. Serve hot.

Makes 36.
