Halved dates are spread with creamy blue cheese, topped with a blanched almond and a dash of cayenne pepper.

Blue Cheese-Stuffed Dates

2 ounces Blue cheese
12 dried dates, pitted and cut into half lengthwise
24 blanched almonds
Toasted cayenne pepper
  1. In a small bowl, mix the cheese until creamy with a hand mixer. You may need to add a few drops of milk if the cheese is crumbly. Set aside.
  2. Place the dates on a serving platter.
  3. Using a knife, spread about 1 teaspoon of cheese on the cut side of each date.
  4. Top each with 1 almond.
  5. Sprinkle the stuffed dates with a dash of cayenne pepper and serve.

Makes 24 appetizers.

Tip: For a variation, use pitted dried plums (prunes) or dried figs.
