
These nutty blue cheese
wafers are great served as an appetizer, snack or with soup.
Blue
Cheese Walnut Wafers
- 1 cup (5 ounces) crumbled
Wisconsin Blue cheese, room temperature
1/4 cup (1/2 stick) butter in pieces, at room temperature
1 cup all-purpose flour
1 cup finely chopped walnut
- Cream the Blue cheese
and butter with an electric mixer until fluffy. Mix in flour
and walnuts thoroughly. Form into a log about 2 inches in diameter
and 12 inches long. Wrap in plastic wrap and chill for at least
1 hour or overnight.
- Preheat oven to 375ºF
(190ºC).
- Cut log into slices 1/4
inch thick. Place slices 1/2 inch apart on baking sheets.
- Bake for 12 to 14 minutes.
Watch closely. Bake just until bottoms are lightly browned. Cool
on wire racks. Store in air tight containers.
