Bologna slices are topped
with a blue cheese spread, cut into wedges and garnished with
a stuffed olive.
Bologna
and Blue Triangles
- 2 (8-ounce) packages cream
cheese, softened
1/2 cup (3 ounces) Wisconsin Blue cheese
1 teaspoon garlic salt
Mayonnaise
18 slices bologna
36 Pimento-stuffed olives
- Blend the cream cheese,
Blue cheese and salt. Add enough mayonnaise to mixture for spreading
consistency.
- Spread cheese mixture
on bologna slices, reserving 3 slices for tops. Pile 5 slices
on top of each other. Top with reserved slices. This should make
3 circles, each 6 slices thick. Chill.
- To serve, cut each circle
into 12 wedges; garnish each with pimento-stuffed olives with
a wooden toothpick.
