
Caramelized leeks and feta
cheese are spooned atop toasted French bread slices and broiled
to perfection. Recipe by Chef Judy Gilliard.
Brochette
with Caramelized Leeks and Feta Cheese
- 1 tablespoon butter
1 cup leeks, washed thoroughly and sliced 1/4-inch thick
Salt and pepper to taste
2/3 cup (4 ounces) Wisconsin Feta Cheese
8 slices French baguette, toasted
- Heat butter in skillet
over medium heat. Add leeks, salt and pepper; cook until leeks
are caramelized. Remove from heat. Stir in cheese. Spoon evenly
on toast slices.
- Preheat broiler and broil
3 minutes or until cheese is soft and hot.
