Caviar Appetizer Pie
An elegant, layered caviar appetizer.
6 large eggs, hard-boiled and chopped
1 1/2 tablespoons mayonnaise
1/8 teaspoon ground black pepper
1 avocado, peeled, pitted and mashed
2 tablespoons minced onion
1 (4-ounce) jar caviar
Rye bread, sliced for accompaniment (optional)
Water crackers for accompaniment (optional)
- Finely chop hard-boiled eggs and mix in a bowl with mayonnaise and pepper; mix well. Chill for 2 hours.
- Layer mashed avocado, minced onion, and the egg mixture in a serving dish.
- Spread caviar on top and serve with sliced rye bread and/or water crackers, as desired.
Makes 12 appetizer servings.
