A lifesaver when a crowd arrives—these take minutes to stir together and it makes a lot. This recipe can be successfully doubled—bake in a 13 x 9-inch pan; increase baking time to 45 to 50 minutes.

Cheesy Sausage Bites

8 large eggs
1/2 cup all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
3 cups shredded mozzarella cheese
1 1/2 cups cottage cheese
3/4 pound spicy pork sausage, cooked and crumbled
  1. In a large bowl, beat eggs, add flour, baking powder and salt. Blend thoroughly. Fold in remaining ingredients. Turn into a greased 9 x 9 x 2-inch baking dish.
  2. Bake in a 350°F (175°C) oven for 40 minutes. Remove from oven; let stand 10 minutes. Cut into small squares; serve warm.

Makes 36 appetizers.
