Stuffed (deviled) eggs
with a mildly spicy curried filling.
Curried
Stuffed Eggs
- 6 hard-cooked eggs
- 1 1/2 tablespoons mayonnaise
- 1 1/2 tablespoons sour
cream
- 1 1/4 teaspoons curry
powder
- 1/4 teaspoon ground cumin
- 1 teaspoon sweet relish
- 1 green onion, chopped
fine
- 1/2 teaspoon fresh lime
juice
- 1/4 teaspoon Tabasco
- Salt and freshly ground
pepper to taste
- Garnish: thinly sliced
green onion
- Cut a paper-thin slice
off both ends of eggs and halve eggs crosswise. Mash yolks with a fork; stir in
remaining ingredients; salt and pepper to taste.
- Transfer filling to a
pastry bag fitted with a large ribbon or other decorative tip and pipe into whites, mounding
it. Garnish with sliced
green onion.
Makes 12 stuffed eggs.
