Crispy fried flour tortillas
filled with Monterey Jack cheese and salsa.

Bites
- 6 tablespoons butter
6 large flour tortillas
3/4 cup (6 ounces) shredded Wisconsin Monterey Jack cheese
3/4 cup salsa or taco sauce
- Melt 1 tablespoon butter
in large skillet over medium-high heat. Add 1 tortilla and fry
on each side until lightly browned. Place about 1 ounce of cheese
and 2 tablespoons salsa along center of tortilla. Fold sides
of tortilla to the center, overlapping slightly. Continue frying
until tortilla is golden brown and cheese is melted. Transfer
to platter and keep warm in oven. Repeat with remaining ingredients.
- Cut each tortilla into
5 pieces and serve hot.
Makes 30 servings.
Optional ingredients: Sprinkle
cumin and chili powder on tortilla. Top with 1 tablespoon each
chopped onion and green pepper. Then top with cheese and salsa
and prepare as indicated.
