Lemon Garlic Oysters

36 Florida oysters, shucked on the half shell
8 ounces (1 cup) butter
1/4 cup fresh lemon juice
1 tablespoon finely chopped garlic
1/2 cup fresh flat-leaf parsley, chopped
- Preheat oven to 350°F (175°C).
- Layer rock salt on a baking sheet. Arrange oysters on half shell on top of rock salt.
- Melt butter in a small saucepan over medium heat; add lemon juice and garlic. Cool slightly then top each oyster with 1/2 tsp. of butter mixture.
- Bake for 10 minutes or until edges of oysters begin to curl.
