Meatless Chopped Liver

No recipe image available.You don't have to be a vegetarian to enjoy this tasty meatless 'chopped liver' spread.

Recipe Ingredients:

1/2 cup raw lentils
1 medium onion, chopped
3 tablespoons vegetable oil
3 hard-cooked large eggs
1/2 cup chopped walnuts

Cooking Directions:

  1. Cook lentils according to package directions; drain. Set aside.
  2. Heat oil in a small skillet on medium-high heat. Add onion and cook until softened. Remove from heat.
  3. Using a food processor fitted with the metal blade, process all ingredients until smooth. Cool. Serve with crackers.

Makes about 1 1/2 cups.
