You don't have to be a vegetarian to enjoy
this tasty meatless "chopped liver" spread.
Meatless Chopped
Liver
- 1/2 cup raw lentils
- 1 medium onion, chopped
- 3 tablespoons vegetable oil
- 3 hard-cooked large eggs
- 1/2 cup chopped walnuts
- Cook lentils according to package directions;
drain. Set aside.
- Heat oil in a small skillet on medium-high
heat. Add onion and cook until softened. Remove from heat.
- Using a food processor fitted with the
metal blade, process all ingredients until smooth. Cool. Serve
with crackers.
Yield: about 1 1/2 cups.
