Mediterranean Popcorn

Mediterranean PopcornPopcorn and toasted pine nuts are tossed with a buttery glaze made with sun-dried tomatoes, olive oil and Italian herbs to create a delightful Mediterranean-flavored snack mix.

Recipe Ingredients:

1/3 cup sun-dried tomatoes, packed in oil, drained
3 tablespoons extra virgin olive oil
2 teaspoons dried mixed Italian herbs
1/2 teaspoon salt
3 tablespoons unsalted butter
3 quarts popped popcorn
1/2 cup toasted pine nuts

Cooking Directions:

  1. In a food processor or blender, combine first four ingredients. Process to form a paste; set aside.
  2. In a small saucepan, melt butter over low heat. Stir in the tomato paste mixture and mix well.
  3. Drizzle over popcorn and toss to coat evenly. Toss in pine nuts. Serve immediately.

Makes 3 quarts; 12 (1 cup) servings.
