Tasty deviled eggs with south-of-the-border
flavor made easy with salsa.
Mexican Deviled Eggs
8 hard-cooked eggs
1/2 cup shredded cheddar cheese
1/4 cup mayonnaise
1/4 cup salsa
2 tablespoons sliced green onions
1 tablespoon sour cream
Salt to taste
- Peel eggs, slice in half lengthwise and
remove yolks.
- In a small bowl, mash egg yolks until
smooth; add cheese, mayonnaise, salsa, onions, sour cream and
salt, mixing well.
- Pipe or spoon egg yolk mixture into egg
white halves. Serve immediately or refrigerate until ready to
serve.
Makes 16 appetizers.
