A simple, yet delicious
spread of roasted red pepper, cream cheese, green onions and
capers.
Roasted
Red Pepper Spread
- 1 large red bell pepper*
- 1 (8-ounce) package cream
cheese, softened
- 2 green onions, chopped
- 1 tablespoon capers
- Char pepper over gas flame
or in broiler until blackened on all sides. Wrap in paper
bag and let stand 10 minutes.
- Peel and seed. Rinse if
necessary; pat dry. Place all ingredients in a food processor
and process until well combined.
- Serve with an assortment
of crackers.
Makes about 1 1/4 cups
spread.
*You may use the canned variety.
