Santa's Cheese Delight

No recipe image available.Shredded gouda and aged cheddar cheese are combined with mayonnaise, green onions, pecans and a dash of hot pepper sauce, molded and topped with a layer of raspberry jam. (You'll have to ask Rudolph the Reindeer why this is Santa's delight!)

Recipe Ingredients:

3 cups (12 ounces) shredded Wisconsin Gouda cheese
3 cups (12 ounces) shredded Wisconsin Aged Cheddar cheese
1 cup reduced-calorie mayonnaise
3 green onions with tops, finely chopped
1/8 teaspoon hot pepper sauce
3/4 cup chopped pecans
1 jar (12 ounces) raspberry or strawberry jam

Cooking Directions:

  1. In large bowl, mix cheeses, mayonnaise, onions and pepper sauce. Mix in pecans.
  2. Press gently into 6 1/2 to 7 inch springform pan. Cover and chill at least 3 hours.
  3. Unmold onto serving plate. Spread jam on top.
  4. Serve with crackers.

Makes 20 appetizer servings.
