Spinach-Feta Aïoli on Crostini

No recipe image available.This is an easy and delicious variation on crostini. Serve as a beginning to your next dinner party.

Recipe Ingredients:

1 (9-ounce) package frozen creamed spinach
3/4 cup mayonnaise
1 (4-ounce) package crumbled Feta cheese
1 garlic clove, pressed
1/4 teaspoon ground red pepper
1 (8-ounce) baguette, cut diagonally into thin slices

Cooking Directions:

  1. Thaw creamed spinach in microwave at MEDIUM (50% power) 5 to 6 minutes.
  2. Stir together mayonnaise and next 3 ingredients; stir in creamed spinach.
  3. Spread creamed spinach mixture evenly on baguette slices, and place slices on baking sheets.
  4. Bake in a preheated oven at 350°F (175°C) for 10 minutes or until cheese melts. Serve immediately.

Makes 8 appetizer servings.

Note: Spinach-Feta Aïoli may be chilled and spread over toasted baguette slices.
