Summer Fruit Kabobs

Summer Fruit KabobsServe these as a fun, healthy snack.

Recipe Ingredients:

1 fresh peach
1 fresh nectarine
2 fresh plums
12 ounces mozzarella cheese (made from part skimmed milk)
4 wooden skewers

Cooking Directions:

  1. Remove pits from fruit and cut into thick chunks.
  2. Cut cheese into 12 (1-ounce) chunks.
  3. Thread fruit and cheese onto skewers.
  4. Skewers may be prepared a few hours ahead of time and stored in an air-tight container in the refrigerator.

Makes 4 servings.
