
Little appetizer skewers
of marinated and grilled flank steak that may be small, but are
definitely big with the taste of Texas.

Ribbons
- 1 1/2 pounds flank steak
Marinade:
1/2 cup barbeque sauce
1/2 cup fresh lemon juice
2 cloves garlic, minced
1/2 teaspoon crushed red pepper
- Bamboo skewers
- Combine barbeque sauce,
lemon juice, garlic and red pepper. Pour over meat, cover and
refrigerate for 1 hour.
- Cut beef diagonally, against
the grain, into 1/4-inch strips. Thread onto skewers and grill
over medium coals 5 to 7 minutes.
Makes 10 appetizer portions.
Tip: When using bamboo
skewers, soak in water before using to avoid burning.
