These tasty snacks are reminiscent of a thin, savory shortbread.
Walnut Cheese Snaps
- 1/2 cup softened butter
1 1/2 cups all-purpose flour
1/4 teaspoon each: baking powder, cayenne pepper and salt
1 cup finely grated, sharp cheddar cheese
1/2 cup finely chopped California Walnuts
2 tablespoons freshly grated Parmesan cheese
- In medium bowl, cream butter; set aside.
- In small bowl, mix together flour, baking powder, cayenne pepper and salt; stir into butter. Add cheddar cheese, walnuts and Parmesan cheese. Mix well using hands until soft dough forms. Shape mixture into two rolls. Wrap in plastic wrap; chill for at least 3 hours.
- Cut each roll into 1/8-inch thick slices. Place on baking sheet.
- Bake at 350°F about 8 to 10 minutes or until a light golden brown. Remove from oven. Leave on baking sheet until just firm, lift onto wire rack to cool completely before storing in sealed containers.
Makes about 6 dozen snaps.
