A tasty vegetarian version of Rumaki.

Water Chestnuts Wrapped with Bacon

1 pound sliced bacon
4 (8-ounce each) cans whole water chestnuts
1/4 cup soy sauce
1/2 cup packed brown sugar
  1. Cut bacon into thirds. Wrap a strip of bacon around a water chestnut and secure with a wooden pick through the bacon and water chestnut. Repeat with remaining bacon and chestnuts.
  2. Place on broiler pan. Cook until bacon is crisp, turning as needed.
  3. Mix soy sauce and brown sugar together in bowl.
  4. Place cooked/wrapped chestnuts in sauce and marinate for a couple of seconds. Serve hot.

Serves 10.
