Blueberry Snack Bars
Blueberry snack bars with a shortbread crust topped with a fresh blueberry and coconut layer.
1 1/4 cups all-purpose flour - divided use
1/2 cup butter, softened
1/4 cup powdered sugar
2 large eggs
1 cup granulated sugar
1 cup blueberries
1/2 cup sweetened flake coconut
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
- Preheat oven to 325°F (160°C).
- Mix 1 cup flour, softened butter, and powdered sugar until smooth. Spread over the bottom of an 8-inch square pan. Bake for 20 to 25 minutes.
- Mix together eggs, sugar, blueberries, coconut, remaining 1/4 cup flour, lemon juice, vanilla, baking powder, cinnamon, and salt. Spread over the top of the cookie base. Bake for another 30 minutes; cool.
Makes 16 bars.
