These dessert bars have a graham cracker crust and a luscious chocolate cheesecake filling.

Chocolate Cheesecake Bars

1 cup graham cracker crumbs
1/3 cup butter, melted
1/4 cup firmly packed brown sugar
1 (8-ounce) package cream cheese
2 large eggs
1/2 cup granulated sugar
3 tablespoons baking cocoa
1 tablespoon all-purpose flour
1/2 teaspoon vanilla extract
2 tablespoons butter
1 cup powdered sugar
1 (3-ounce) package cream cheese
1/2 teaspoon vanilla extract
  1. Heat oven to 350°F (175°C).
  2. Combine graham crackers, melted butter and brown sugar and press into ungreased 8 x 8-inch baking pan. Bake for 10 minutes.
  3. Beat 8 ounces cream cheese and eggs until smooth. Add sugar, cocoa, flour and vanilla, mixing well. Spread over baked crust. Bake for 30 minutes and cool on wire rack to room temperature.
  4. Combine remaining butter and cream cheese. Beat until well blended. Add
    powdered sugar and vanilla. Beat until smooth. Spread over filling. Cut into bars. Keep refrigerated.

Makes about 16 bars.
