Coconut Pecan Chews
A rich, delicate cookie-bar with a pecan filling and a tangy citrus icing.
Recipe Ingredients:
Bars:
3/4 cup powdered sugar
3/4 cup vegetable shortening
1 1/2 cups all-purpose flour
2 large eggs
1 cup brown sugar, packed
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/2 cup chopped pecans
1/2 cup flaked coconut
Icing:
1 1/2 cups powdered sugar
2 tablespoons butter, melted
3 tablespoons orange juice
1 teaspoon fresh lemon juice
Cooking Directions:
- Preheat oven to 350°F (175°C).
- For Bars: Mix powdered sugar and shortening together; stir in 1 1/2 cups flour. Press in ungreased 13x9x2-inch baking pan. Bake 12 to 15 minutes or until light golden brown.
- Mix remaining ingredients. Spread over baked layer. Bake additional 20 minutes. Cool slightly and frost with the icing.
- For Icing: Mix ingredients together and frost bars.
Makes 36 bars.
