A rich, delicate cookie-bar reminiscent of pecan pie.

Coconut Pecan Chews

3/4 cup powdered sugar
3/4 cup vegetable shortening
1 1/2 cups all-purpose flour
2 large eggs
1 cup brown sugar, packed
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/2 cup chopped pecans
1/2 cup flaked coconut
Icing (recipe follows)
  1. Preheat oven to 350*F (175*C).
  2. Mix powdered sugar and shortening together; stir in 1 1/2 cups flour. Press in ungreased 13 x 9 x 2-inch baking pan. Bake 12 to 15 minutes or until golden brown.
  3. Mix remaining ingredients. Spread over baked layer. Bake additional 20 minutes. Cool slightly and frost with the icing.

Icing:

1 1/2 cups powdered sugar
2 tablespoons butter, melted
3 tablespoons orange juice
1 teaspoon fresh lemon juice
  1. Mix ingredients together and frost bars.

Makes 36 bars.
